Chicken Seekh Kabab Baked!!!!!

Seekh Kabab is one of the dishes liked by my family. We would often order these in the restaurants. These always looked and sounded very difficult to me however having tried my hands making these kabas I can assure you this is an extremely easy recipe. So what are we waiting for, let’s get started with the step by step process involved in making these kababs.




Ingredients Required:

Ingredients

Minced/Ground Chicken      (with some chicken fat)
300 grams
Onions chopped fine
1/4th cup
`Green chillies chopped
1 tsp
Grated garlic
1 tbsp
Grated ginger
1 tsp
Coriander powder (Coarse)
1tsp
Garam Masala Powder
1 tsp
Green cardamom powder
1 tsp
Lime Juice
1tsp
Mint Leaves chopped
2 tbsp
Red chilli powder
1 tsp
Butter/0il
1tbsp
Salt
To taste
Chat Masala
For garnishing


Please Note: 1) for this quantity of meat we would require 6 bamboo skewers (These are easily available in Indian/ Asian stores)
2) The amount of green chilies used here is 2 however depending on your liking you may increase it. I personally prefer it to be mild.
3) To make sure that skewers don’t look completely charred and hold on to the meat well do soak them in cold water for 10 to 15 minutes before use.

Method of Preparation:
  • The first trick in making kabas are to remove any water /moisture from the meat. After washing the meat thoroughly drain the water and roll them either with good paper towels or dry cloth for 2 hours.
  • Use a blender/mixer to mince the chicken. (If you are using store bought mince chicken all you have to do is follow the first step of washing and removing excess moisture)
  • To this add all the above mentioned ingredients except chat masala. Mix them thoroughly with your hand.
  • Now wet your palms and take a small portion of the above mixture and make a ball out of it.
  • Slowly press this ball around the skewer and flatten it. Make sure the meat is spread evenly around the skewer for the meat to cook evenly.
  • Similarly take rest of the mixture make 5 balls and press out kabas.
  • Place these on a baking dish and put it in the oven for about 10 to 15 minutes at 360 F.
  • Now turn sides and bake for another 10 to 15 minutes. Make sure to check in-between as the temperature settings for each oven is different. In about 25 -30 minutes the kabas are ready to be served.
  • Squeeze some lime, sprinkle some chat masala and kababs are ready to be devoured.

Scones (Eggless Version)!!!!!

Many of us want something to munch in the evenings around 4 pm; tea time mostly!!! Tried my hand making these scones – I have to admit these are super easy and quick to make. Does not require much effort. Let’s get going with this easy recipe.




Ingredients Required:

Ingredients
Quantity
All purpose flour/Maida
2 cups
Butter
1/4th cup
Salt
A pinch
Baking powder
1 tbsp
Milk
3/4th cup
Sugar
5 tbsp
Oregano
½ tsp
Any other herb mixed with chilli flakes of your choice
½ tsp


Method of preparation:
  • Take a bowl and add flour, butter, salt, baking powder and herbs to it. Mix all these ingredients with your finger until all the ingredients blend well.
  • Mix sugar with milk, let the sugar completely dissolve in the milk and then add to the above mixture until a soft dough is formed. The dough is soft hence we don’t need to rest the dough unlike lot of other recipes for scones I have come across. This dough will feel smooth to our fingers.
  • Sprinkle some flour on the countertop and roll the dough on it with the help of a rolling pin. The thickness should be about 1/2 inch, now with the help of cookie cutter cut them into round and place them on the baking tray. (I didn't have a cookie cutter hence had to make do with a firm cap of a bottle). The result using cookie cutter will be even better.
  • If you wish to apply or brush the top of these with milk (gives it a good finish and tastes better too)
  • Bake these at 425 F for 10 minutes.
  • These scones turn slightly brown. Scones are now ready to be savoured.
Note:  the quantity of herbs used here is less as i wanted to make this as per my liking however you may increase the quantity if you wish to.

Tutti Frutti Cake

With cold temperature throughout winter baking just became inevitable for me. To top it up, praises from family members made it impossible for me to stay away from the oven. It’s really nice, It’s really nice…these were the words from my hubby….what more does one need to hear. I need no excuses to make this……nibbling it away and finishing it completely the day it is made and presented. This cake recipe is really simple to make or bake.



Ingredients Required:


Ingredients
Quantity
All purpose flour/Maida
1 cup
Sugar ( Powdered)
3/4th Cup
Oil
½ Cup
Baking Powder
1 tsp
Egg
1
Salt
A pinch
Broken Cashews and Raisins
1 tbsp. each
Tutti frutti
1/4th cup
Vanilla Essence
1 tsp
Milk
 ½ cup





Method of Preparation:
  • Pre heat oven and place the greased bread pan/baking pan inside the oven
  • Place all the above ingredients in a mixing bowl and blend with well with a hand blender
  • Remove the pan from the oven let it slightly cool and pour the above mixture into it
  • Set the temperature at 350 Degree F and place the pan inside it for about 20 minutes
  • Do check by inserting a toothpick in the centre of the cake; if it comes out clean cake is done else it can be placed in the oven for about 5 to 10 minutes more till its done ( Pls note: each oven has different temperature settings; hence the baking time may vary slightly)

Here you go with the cake either serve with a cup of tea or coffee or have it your way!!!!!

Fish Cutlets

Fish cutlets to me are one of the best starters to be served as this particular recipe does not require much oil. It is light yet yummy. Fish being a lean meat and good for health one can have this guilt free. Presenting these cutlets done my way hope you all like it!!!!



Ingredients required:

Tilapia Fish Fillets

Mint Leaves chopped

Garam Masala Powder
1 tsp
Eggs

Bread crumb
1 cup
Salt
To taste
Oil
As per requirement

Method Of Preparation:

  • Wash the fish fillets thoroughly and pat dry
  • Preheat the oven for about 5 minutes. In the meantime place the fish on an aluminium foil and cover it with the same. Place both the fish and medium sized potato on a baking tray and let it bake at 350 degree F for about 25 minutes.
  • Once done remove the fish and potato and let it cool down.
  • Remove the potato skin and mash it with the fish. Now add ginger, garlic, onions, green chillies, cilantro, mint, garam masala and salt to taste. Mix all the ingredients thoroughly and set aside.
  • In a separate bowl beat the eggs.
  • Place the wok on the burner and add 1 tbsp oil, let it become warm. In the meantime make small patty like shape of the mashed ingredients (flat and round in shape), dip the same in the beaten eggs and then roll it on the breadcrumbs both sides. Once 5 to 6 of them are ready. Place the same on the wok.
  • Once you see the colour changing to brown you may now flip it and let it cook. Once both the sides are brown the cutlets are ready. These cutlets should be cooked on low to medium heat only.
  • Place the same on paper towels to absorb the excess oil.
  • The fish cutlets are now ready to be served. Enjoy the same with ketchup or sauce of your choice.
