Ghugni

Ghugni...... the ones who are familiar with this word when they read this or hear ghugni it rings a
bell :-) Be it made by mummy at home or had some at a famous food joint the taste is just unforgettable. Each one of have a certain way of cooking the same dish and the taste does vary sometimes  however we have our reason to do so; similar is the story for this dish too!!!! Wonder Why???? Largely because by the below mentioned method of cooking the use of oil is drastically reduced ,the texture is nice and the taste is awesome too.

Ingredients:

Ingredients Required
Quantity
Dry White Peas
1 cup
Tomatoes (diced)
1 Large
Ginger (grated)
1 tbsp
Bayleaf
1
Cinnamon Stick
2 inch long
Cumin Seeds
1 tsp
Corainder powder Coarse
1 tsp
Red Chilli Kashmiri Powder
1 tsp
Garam Masala Powder
1 tsp
Ketchup (Optional)
1tsp
Oil
1.5 tbsp
Salt
To taste
Onions Sliced
For garnishing
Cilantro Chopped
For garnishing
Green Chilli Chopped
For garnishing
Himalayan Pink Salt
Sprinkle a little while serving

Method Of Preparation:
  • Soak peas for 4 to 5 hours. Later drain the water, wash again and keep it aside.
  • Place the pressure pan cooker on the burner let the pan warm a little. Pour oil in the pan and once it is warm enough add cumin seeds, let it splutter. Now add bayleaf, cinnamon stick, ginger, tomatoes; saute this well and let it cook for good 3 to 4 minutes. As we are using less oil here it is recommended to keep stirring occasionally else it will burn and stick to the base.
  • Now add corainder powder , red chilli powder, ketchup, garam masala powder and salt to taste. Stir well and let it cook for a minute or two. You should be able to see the oil separates from the spices.
  • Add peas to it and give it a good mix, Add 1/2 cup to 3/4th cup water , stir and cover the lid. Note: Usually peas are fist boiled and then it is seasoned however by this method I can assure you the taste is even better, cooks in less time and is very easy to make.
  • After two whistles turn off the burner. Let it rest for 10 minutes or so. Now garnish with sliced onions, chopped cilantro, chopped green chillies and sprinkle himalayan pink salt.
  • Ghugni is now ready to be served. Serve with roti, puris, parathas or plain dosas :-)
Please make sure not to overcook in the cooker as the peas will be mushy and will not taste good at all. Again if for some reason after opening the cooker you find the peas are too dry then add little water and boil for a minute or two.

Coconut Ladoos ( Quick and Easy)

I am writing after a long gap. Moved to a new place; i have set the new place and now i hope to write as frequently and as and when i want to. The festival season starts with Ganesh Chaturthi; I always look forward to these festivals as it just changes the mood, the feel, the need and urge to make and try new dishes. Today i am presenting coconut ladoos made of just four ingredients.

Ingredients Used:

  • 2 cups of shredded desiccated Coconut + about 2 tbsp keep aside
  • 1 cup condensed milk
  • 1 tsp cardamom powder
  • 2 tbsp dry fruits( Almonds, Cashews, Pistachios) coarse powder
Method of cooking:
  • Place the wok on the burner, add two cups of shredded coconut. Keep stirring until it starts turning slightly brown. Do not burn it. Now switch off the burner and remove the wok from the burner.
  • Now add condensed milk, blend it really well with a spatula. Add cardamom powder and dry fruits to it and give it a good mix.
  • Remove the above mixture and place it on a plate. Allow it to slightly cool down.
  • Take a small portion of the mixture and roll it between both palms, give it a round shape. Now roll these on the loose shredded coconut powder. The above mixture will make about 20 ladoos. The prasad for Ganesh Chaturthi is ready.

Besan Ladoos/ Sweetened Chickpea Flour balls ( Done in microwave)

This is an easy peasy recipe which can easily be done in the microwave ( All you need is 5 minutes to 10 minutes to make about 15 ladoos). Since its the arrival of festival season wanted to make couple of sweets for prasad however doing a couple with a 2 year kid can be a challenge at times hence took the help of microwave and trust me the end result is really good.

Ingredients Used:

  • 1 Cup Besan/ Chickpea Flour
  • 6 Tbsp Ghee or clarified butter
  • 1/2 Cup Powdered Sugar
  • 1.2 tsp Cardamom powder
  • 2 tbsp coarse dry fruit powder
  • 15 Raisins
  • Microwave Safe Bowl
Method of Preparation:
  • In the bowl add chickpea flour and clarified butter. Mix well and place it in microwave for two and half to three minutes ( Remove it after every minute give it a stir and place it back) Each microwave setting is different hence make sure not to burn it. After 2.5 to 3 minutes the mixture turns brown in color. With the color and aroma we will come to know that it is well cooked.
  • Allow it to cool down, Now add sugar, cardamom powder , dry fruit powder to it and mix well. When you try to take a small portion and place it on your palm you will be able to feel the butter on your palms i.e. this will help to bind or hold the shape of a ball without any cracks. If you feel the butter is less , take some butter separately and warm it. Then add it to the mixture.
  • Place the mixture between your palms and give it a round shape. Place a raisin on each ladoo. The ladoos are ready to be served. You can store these for good 15 days in an airtight container.

Fish Fry (with a slight twist)!!!!!

Fish is one of my favorite food almost in every form be it fried, baked or curry. My love for fish only increases every time  I prepare it.  It definitely takes more time to cook however it's worth it; considering it's health benefits compared to other non veg dishes. Today I am sharing a very simple fish fry dish. Unlike India where fresh water fish is easily available had to make do with the fish fillets in the US......however the results are not bad at all.  There is a slight twist in the recipe as we would generally use just turmeric powder, salt and red chili powder to smear it however have modified the recipe slightly as it tastes even better with the ingredients mentioned below.
Let's get started with this simple dish with readily available simple ingredients in the kitchen.

Ingredients Required:

Ingredients
Quantity
Fish fillets (cut in pieces)
2
Turmeric powder
11/2 tsp
Green chillies (chopped fine)
1 to 2
Garlic grated
1 tbsp
Ginger grated
1 tsp
Cilantro leaves chopped fine
2 tbsp.
Oil for frying
 2 tbsp.
Lime juice ( at the time of serving)
1 tbsp.
Salt
To taste
Onions sliced
As needed

Method of Preparation:
  • Wash the fish fillets thoroughly and cut them in small sizable pieces.
  • In a bowl mix turmeric powder, green chillies, garlic, ginger and salt thoroughly.
  • Now smear this paste on both sides of the fish fillets; let it rest for about 10 minutes.
  • Pour oil in the frying pan and let it be warm enough; now place the fish fillets
  • Allow it to be slightly brown and then flip it carefully without breaking it
  • Once both the sides are brown place the same on a plate and squeeze some lime juice on it
  • Serve hot with some sliced onions. This can very well be had with steamed rice; dal or have it just like that :-)
Enjoy cooking!!!!

Today i am presenting to you a very simple, quick , easily liked by everybody a cake which is egg-less and oil-less.  This cake does not rise like other cakes yet it's spongy, soft and perfectly baked.
People from the state Odisha located in the eastern part of India will call this dish as "Chenna Poda" however I say that it is very close to the taste of "Chenna Poda" but slightly different because of the method of cooking involved (It is primarily made from fresh Chenna or Paneer and Suji.......hopefully will come up with that recipe soon). Enjoy baking this simple dish :-)
