Eggless Whole Wheat Flour (Atta) Chocolate Cake

Yes, once again into baking. Yet another eggless cake, this recipe would have been sitting in my folder had my friend not asked for one. Dietary restrictions, health issues should not be a reason not to enjoy eating cakes :-); tried to make this as healthy as possible by avoiding all-purpose flour and eggs. Hope you will like this recipe.



Ingredients Required
Quantity
Wheat flour (atta)
1.25 cups
Brown Sugar
¾ cup, you may use 1 cup if you prefer the cake to be sweeter
Cocoa Powder      (Hershey’s unsweetened)
0.25 cup
Oil
1/3 cup
Vanilla Essence
1 tsp
Baking Powder
1 tsp
Coke
1 tbsp
Table Salt
1 pinch
Milk*
1 cup

*For any reason if you do not want to use milk you may use water.

Method of Preparation:
  1. In a deep vessel, add sugar to the oil until sugar dissolves.
  2. Sift flour and then add all the dry ingredients along with flour to the above mixture.
  3. Slowly in small batches add milk to make a smooth batter. Make sure the batter is of medium consistency.(Tip: for eggless cake slightly thin consistency works well as the cake comes out soft).
  4. Add essence and in the end add coke. stir well and set it aside for 10 minutes.
  5. Grease the baking pan and place it in the preheated oven for 2 to 3 minutes at 375 degree F.
  6. Take the pan out, dust some flour and then transfer the batter to the pan. Make sure there are no air bubbles.
  7. Place the pan in the oven and let it bake for 20 minutes. Since the heat setting of each oven differs I would suggest you to open and check the progress at regular intervals; accordingly increase or decrease the time required for baking.
  8. To make sure the cake is fully cooked insert a toothpick if it comes out clean the cake is fully cooked.
  9. Allow the cake to cool and then it is all ready to be served.

Eggless Whole Wheat Flour (Atta) Cake

I am writing after a very long break....almost after a year. Finally decided let's get started again. Since  I enjoy baking; thought why not start with one of cake recipe!!!! I have been trying to make eggless cakes for several reasons. I have friends who say they want to avoid eggs, all purpose flour for health reasons. Some say cake without eggs don't taste good; think again since this recipe I really found it yummy:-). There are many families who strictly do not take eggs. Posting this for all my friends who want to try their hand in baking cakes without eggs. Hope you enjoy this as much as I did.

Ingredients Required

Wheat (atta)
1 cup
Fine Semolina (rava)
¼ cup
Milk Powder
½ cup
Oil
½ cup
Brown Sugar
½ cup
Baking Powder
1 tsp
Vanilla Essence
½ tsp
Milk*
½ - ¾ cup
Coke
7 tbsp.


Method of preparation:
1. Pre-heat oven to 350F/180C.
2. Mix sugar and oil together so that sugar dissolves completely.
3.Mix all the dry ingredients to the above mixture.
4. Add vanilla essence, milk and coke in the end; blend it well until a smooth mixture forms and there are no  lumps. Make sure the mixture is not too thin nor too thick.
5. Transfer the batter to a 8*8 pan or any desired pan you have for the given quantity.
6. Allow it to bake for 20 to 30 minutes; do check it from time to time since each oven heat settings are    different.
7. Insert with a toothpick to see if it comes out clean, if it does; allow it to cool for 10 minutes and then its  ready to serve. Serve with tea or have it as it is. Enjoy baking :-)

* Milk - use as required at room temperature.
You may add dry fruits like crushed almonds to make it more rich.
I have not used baking soda however if you are keen you may add 1 tsp.
