Apple Cake Eggless !!!!!!( Goodness of Oats, wholewheat flour, Semolina)

Cakes it is!!!! Presenting the easiest cake ever made. This cake is mostly made of ingredients available easily at home. Since this is such an easy cake to make and made mostly with the ingredients like oats, whole wheat flour, semolina, milk powder etc. you will not hesitate to give it to your kids. Not just kids, elders can enjoy too :-) ...... Lets get started.

Whole Wheat Flour
1/3rd cup
Oats (no need to roast or make powder)
1/3rd cup
Semolina (Coarse Roasted)
1/3rd cup
Milk Powder
1/3rd cup
Milk (Room temperature)
1/3rd cup
Oil
1/3rd cup
Sugar ( Brown or white)
1/3rd cup
Apple ( Peeled and cubed small)
1 medium size
Cinnamon powder
½ tsp
Baking Powder
¼ tsp
Baking Soda
¼ tsp



Method of Preparation:
  • In a mixing bowl add all the ingredients except baking powder and baking soda.
  • Combine all the ingredients with an electric blender. now add baking powder and soda; give it one good mix. let it sit for 10 minutes.
  • In the mean time preheat oven. now grease the baking pan and pour the batter evenly. 
  • Place the pan in the oven at 350 degree F for 30 minutes. Each oven setting is different hence to check if the cake is done. Pierce a toothpick into it. If it comes out clean, its done.

Whole Wheat Pound Cake!!!! EGG LESS


My experiments continue with egg less cakes especially comprising of ingredients like whole wheat flour due to obvious health benefits compared to all purpose flour. Extremely easy recipe take about 5 to 10 minutes to prepare the batter and about 30 minutes for baking. Lets get started with the making and baking..........






Ingredients Required:

Whole Wheat Flour
1.5 Cups
Baking Soda
1 tsp
Vanilla Essence
1 tsp
Oil/Melted Butter
½ cup
Sweetened Condensed Milk
1/3rd cup
Milk (Luke warm milk)
½ cup+ 1/4th cup (this one to make the batter thin in consistency)
Sugar ( add more if you wish to make the cake sweeter)
1/4th cup

Method of Preparation:
  • Preheat the oven at 350 degree F. Place a loaf pan into it.
  • In a mixing bowl sieve flour and then add all the other dry ingredients
  • Now add oil, condensed milk and 1/2 cup milk. Mix it well with an electric blender.
  • Slowly add the remaining 1/4th milk and the essence. Blend it one last time, make sure there are no lumps and let the batter rest for 5 minutes.
  • Remove the loaf pan and once it cools down slightly spray oil into it or evenly apply oil  to it.
  •  Pour the batter into the pan and place the same in the oven at 350 degree F
  • Allow it to bake for 30 minutes and then switch off the oven and let it rest there for 10 minutes more. Each oven setting is different hence use it accordingly and check the cake at regular intervals. To check if the cake is completely done insert a toothpick and see if it comes out clean. If it comes out clean the cake is ready to be enjoyed :-)

Whole Wheat Custard Cake!!!!( Eggless)

Yet again another cake. Yes, I am back to baking again:-) Not sure if it brings a smile back on your face when you hear of cakes but sure it does to me. As a kid i always loved cakes, well who didn't????
Have learnt the basics of baking from my Mom hence the credit goes to her that today i have successfully baked varieties of cake and still in the process of exploring, experimenting with cakes.
I am sharing a very simple, quick and easy to bake egg less cake recipe.




Ingredients Required:

Ingredients

Whole Wheat Flour
1 ½ cup
Milk
1 cup +1/4th  cup
Brown Sugar (You may increase the quantity as per your taste and liking)
1/2 cup + 4 tbsp
Weikfield Custard Powder
½ cup
Baking Powder
1 ½  teaspoon
Baking Soda
¼ teaspoon
Vanilla Essence
1 teaspoon
Salt
A pinch
Oil
1/3 cup + 4 tbsp
Chopped dry fruits
3 tbsp

Method of Preparation:
  • Preheat the oven to 350 F for about 5 minutes, Place the baking pan also in it.
  • Sieve flour in a mixing bowl and then add all the dry ingredients except dry fruits
  • Now add milk and blend the ingredients together with an electric blender
  • Add oil and then blend again. This is how it must look.



  • Add two tbsp. dry fruits and essence, give it one last blend
  • Take the baking pan and grease some oil around.
  • Now spread the batter into the baking pan and garnish with remaining chopped nuts
  • Place it in the oven at 350 F for about 30 to 40 minutes( Each Oven setting is different hence please keep a close watch. I bake it for 30 minutes and then left it in the oven in the switched off mode for 10 minutes more.
  • Remove from the oven and insert a toothpick to see if it is done. If the toothpick comes out clean then the cake is ready to be served with tea or milk

Ghugni

Ghugni...... the ones who are familiar with this word when they read this or hear ghugni it rings a
bell :-) Be it made by mummy at home or had some at a famous food joint the taste is just unforgettable. Each one of have a certain way of cooking the same dish and the taste does vary sometimes  however we have our reason to do so; similar is the story for this dish too!!!! Wonder Why???? Largely because by the below mentioned method of cooking the use of oil is drastically reduced ,the texture is nice and the taste is awesome too.




Ingredients:

Dry White Peas
1 cup
Tomatoes (diced)
1 Large
Ginger (grated)
1 tbsp
Bayleaf

Cinnamon Stick
2 inch long
Cumin Seeds
1 tsp
Corainder powder Coarse
1 tsp
Red Chilli Kashmiri Powder
1 tsp
Garam Masala Powder
1 tsp
Ketchup (Optional)
1tsp
Oil
1.5 tbsp
Salt
To taste
Onions Sliced
For garnishing
Cilantro Chopped
For garnishing
Green Chilli Chopped
For garnishing
Himalayan Pink Salt
Sprinkle a little while serving

Method Of Preparation:
  • Soak peas for 4 to 5 hours. Later drain the water, wash again and keep it aside.
  • Place the pressure pan cooker on the burner let the pan warm a little. Pour oil in the pan and once it is warm enough add cumin seeds, let it splutter.Now add bayleaf, cinnamon stick, ginger, tomatoes; saute this well and let it cook for good 3 to 4 minutes. As we are using less oil here it is recommended to keep stirring occasionally else it will burn and stick to the base.
  • Now add corainder powder , red chilli powder, ketchup, garam masala powder and salt to taste. Stir well and let it cook for a minute or two. You should be able to see the oil separates from the spices.
  • Add peas to it and give it a good mix, Add 1/2 cup to 3/4th cup water , stir and cover the lid. Note: Usually peas are fist boiled and then it is seasoned however by this method I can assure you the taste is even better, cooks in less time and is very easy to make.
  • After two whistles turn off the burner. Let it rest for 10 minutes or so. Now garnish with sliced onions, chopped cilantro, chopped green chillies and sprinkle himalayan pink salt. 
  • Ghugni is now ready to be served. Serve with roti, puris, parathas or plain dosas :-)
Please make sure not to overcook in the cooker as the peas will be mushy and will not taste good at all. Again if for some reason after opening the cooker you find the peas are too dry then add little water and boil for a minute or two.

Coconut Ladoos ( Quick and Easy)

I am writing after a long gap. Moved to a new place; i have set the new place and now i hope to write as frequently and as and when i want to. The festival season starts with Ganesh Chaturthi; I always look forward to these festivals as it just changes the mood, the feel, the need and urge to make and try new dishes. Today i am presenting coconut ladoos made of just four ingredients.




Ingredients Used:

  • 2 cups of shredded desiccated Coconut + about 2 tbsp keep aside 
  • 1 cup condensed milk
  • 1 tsp cardamom powder
  • 2 tbsp dry fruits( Almonds, Cashews, Pistachios) coarse powder
Method of cooking:
  • Place the wok on the burner, add two cups of shredded coconut. Keep stirring until it starts turning slightly brown. Do not burn it. Now switch off the burner and remove the wok from the burner.
  • Now add condensed milk, blend it really well with a spatula. Add cardamom powder and dry fruits to it and give it a good mix.
  • Remove the above mixture and place it on a plate. Allow it to slightly cool down.
  • Take a small portion of the mixture and roll it between both palms, give it a round shape. Now roll these on the loose shredded coconut powder. The above mixture will make about 20 ladoos. The prasad for Ganesh Chaturthi is ready.
