Eggless Ricotta cheese and Semolina Cake (No oil used) !!!!!

It's a weekend, needless to say  it's time to spend quality time with family. There are times during weekend I like to do some elaborate cooking while sometimes rest is good hence I like to do quick recipes to save time and at the same time enjoy with my family and friends. Today i am presenting to you a very simple, quick , easily liked by everybody a cake which is egg-less and oil-less.  This cake does not rise like other cakes yet it's spongy, soft and perfectly baked.
People from the state Odisha located in the eastern part of India will call this dish as "Chenna Poda" however I say that it is very close to the taste of "Chenna Poda" but slightly different because of the method of cooking involved (It is primarily made from fresh Chenna or Paneer and Suji.......hopefully will come up with that recipe soon). Enjoy baking this simple dish :-)



Ingredients Required:

Ingredients
Quantity
Ricotta Cheese
15 oz or 425 grams
Semolina/ Rava/Suji 
(Coarse Variety)
1/4th Cup
Sugar
½ cup
Powdered green Cardamom
1 tsp
Broken cashews
1 tbsp
Raisins
1 tbsp

Method of Preparation:
  • Preheat oven at 350 degree F
  • Mix all the above ingredients in a bowl and allow it to rest for about 10 minutes
  • Spread the batter evenly on a greased baking tray
  • Bake for about 30 minutes at 350 degree F and then let it rest inside the oven with the oven at switched off mode for another 10 minutes 
  • The edges should be brown by now
  • Remove it from the oven and let it slightly cool down for 15 minutes
  • Flip it out, cut it into small pieces and serve warm
  • You can have this room temperature too. Store it in the refrigerator and warm it before you have or you may have it cold if you like since I like it either ways.

Eggless Banana Semolina Cake (Used just 1 tablespoon oil)!!!!!

I am constantly in search for healthy baking ideas especially cakes. I guess every lady wants to give her family and herself  a healthy yet yummy food. Hence today I am sharing a cake recipe which has no eggs; requires only 1 tablespoon oil. I bet you all the ingredients are easily available at home and is very easy to prepare. Let's have a look at the ingredients and cooking method.




Ingredients Required:

Banana ( mashed)

1 tbsp
Sugar powdered
3 tbsp
Vanilla Essence
½ tsp
Milk
1/3 cup
Semolina Fine
1 cup
All Purpose Flour
1tsp
Baking Powder
1 tsp
Baking Soda
¼ tsp
Dry fruits of your choice
1 tbsp


Method of Preparation:
  • In a mixing bowl mash the banana (should be like a fine paste), add to it oil, sugar ( you may increase if you want this cake to be more sweet), essence and
    1/2 of the above mentioned milk. Mix it really well with a spatula.
  • Now add all the dry ingredients and the remaining milk. Give it one last good mix.
  • Grease a baking tray pour the batter and spread it evenly.
  • Place the tray in the oven at 350 degree F for about 25 to 30 minutes. Prick a toothpick in the center and see if it comes out clean. If it does cake is ready to be devoured!!!!!

Strawberry Mousse!!!!!

Strawberry mousse sweet quick and extremely easy recipe.....just perfect when served in shot glasses to satiate sweet cravings. Let's get a quick look at the ingredients and method of preparation.


Ingredients:

Lot fat whipping cream
¼ cup

Strawberry chopped

Method of Preparation:
  • Chop strawberries , add 1 tbsp sugar and blend them together. Make sure there are no chunks left.
  • For the above mentioned quantity I have used 5 shot glasses; pour 1 tbsp of the puree in every shot glass
  • In the same blender add the whipping cream, sugar (if you wish you add more sugar you may do so however i personally restrict to 2 tbsp) and blend it for good 2 minutes or until it becomes thick. Spoon the mousse in every shot glass on top of the puree.
  • Cover with sling wrap and place the same in the refrigerator for good 6 hours.
  • Garnish with fresh strawberries.

Eggless Milk Powder Cake !!!!

Never came across anyone not having a liking for cakes especially simple , yummy homemade cakes. I use to think it is extremely difficult make moist, delicious cake without the use of eggs....however having tried my hand at baking for couple of years and with all the experiments in my kitchen I finally made this perfect cake with easy ingredients and easy method of preparation.

Ingredients Required:

All Purpose Flour/Maida
1 cup
Milk Powder
½ cup
Oil
½ cup
Powdered Sugar
½ cup
Baking Powder
½ tsp
Baking soda
¼ tsp
Salt
A pinch
Milk
3/4 to 1 cup
Vanilla Essence
½ tsp

Method of Preparation:
  • In a mixing bowl add all the dry ingredients (Sift the flour), mix well.
  • Now add oil and use an electric hand blender to blend the ingredients well. Add milk slowly to this mixture( little at a time). Once all the milk has been added, the texture of the batter will be smooth and thin. Add essence and give it one last mix.
  • Now preheat the oven for about 5 minutes
  • Grease the baking pan and pour the batter in it, let the batter rest in the pan for 5 to 10 minutes before placing in the oven.
  • Let it bake at 350 degree F for about 20 to 25 minutes.
  • Insert a toothpick in the center and see if it comes out clean. If it does your cake is ready.

Minty Egg Curry

I am on a spree to experiment cooking with just about 1 tbsp or less oil. It is fun , exciting and satisfactory when the results of these experiments are just too good. Taste and health must go hand in hand to keep everybody in the family happy including myself. Tried making this curry practically using all the ingredients made at home , spices especially which gives out a good aroma and amplifies ones taste bud!!!!!


Ingredients Required:

Cumin seeds

Fennel seeds

Black pepper corns
1 tsp
Bay leaf

Dry Red Chillies

Mint leaves chopped
1/4 cup
Oil
1 tbsp
Turmeric
1 tsp
Salt
To taste

Please Note: 1) *Dry roast cardamom, cloves, cumin seeds, fennel seeds, black pepper corns, dry red chilli until these turn light brown in colour and releases strong aroma. Allow these to cool and dry grind these to make a fine powder.
2) The amount of red chillies used here is 2 however depending on your liking you may increase it. I personally prefer it to be mild.

Method of Preparation:
  • In a wok pour a little water and add tomatoes, onions, garlic pods and ginger. Bring these to a boil for 5 to 8 minutes.
  • Allow it to cool and then place them in a blender and make a fine paste.
  • In a frying pan add 1 tablespoon oil and once its warm fry the hard boiled eggs evenly, once it’s slightly brown remove and set aside.
  • In the same pan with the remaining oil add bay leaf, once it starts spurting add the above paste and sauté for some time, to this add the * fine powder, turmeric and salt ; mix well and keep stirring. Add water according to the consistency you want for the gravy (I prefer medium gravy). Once it starts boiling add the boiled eggs and cook for a minute or two with the lid covered. 
  • Add chopped mint leaves to it and minty egg curry is all set to be served with roti or rice.
